Course Content

The Diploma in Patisserie is an exciting two year, full-time, work related course for students who would benefit from employer involvement and work experience. This course combines patisserie knowledge with the opportunity to build on your skills through a relevant work placement.


The programme includes a work placement in the second year in a patisserie, confectionery position. Training takes place in the College’s industry-standard production and training kitchens, T.A.S.T.E. restaurant and the pastry kitchen.


Modules include:

Advanced Patisserie Knowledge, Prepare, Cook and Present Advanced Dough & Pastry Products, Petits Fours & Confectionery Items, Decorative Patisserie Items and Fermented Products.


Entry Requirements

  • You need to have completed your secondary school certificate and higher secondary school certificate.

  • You need to have a minimum of one year work experience in the pastry section of a kitchen.

  • You need to have an IELTS score of at least 5.0 (or equivalent).

Postgraduate Diplomas


Earn while you learn


Postgraduate Diplomas have been designed to offer you the chance to ‘Earn while you learn’. This includes a salaried 9 month work placement as part of the course.


These programmes comprise of full-time classroom tuition and a salaried work placement. The work placement is sandwiched between the in-classroom sessions. We have a dedicated work placement team to assist students with their placements. The work placement is an integral part of the course; it is monitored by course tutors and is formally assessed. The placements can be situated anywhere in the UK. You can expect to earn a gross minimum of £230 for 40 hours of work per week.


  • Full-time study: 5 months

  • Work placement: 9 months + 3 months holiday

  • Full-time study: 4 months

After successful completion of the Postgraduate Diploma (except Nursing and Retail Management) courses you will have the opportunity to progress onto our MBA (Hospitality Management) Condensed Programme (see page 35 for course details)

Postgraduate Diploma in Graduate Chefs in Culinary Arts

This course is designed to teach the necessary skills in modern culinary operations. The course includes a nine month paid work placement in a food and beverage production position within the hospitality management industry in the UK. Assessment is through assignments, observed practicals, case studies, group projects and industrial placements.

Kitchen Organisation, Food Safety, European Cuisine, Vegetarian Cuisine and Health & Hygiene.
